Steve joined The Mandarin Oriental Hotel Group in 2007, first as Beverage Director, Singapore and then as the Opening General Manager of The Sultan Lounge at The Mandarin Oriental in Kuala Lumpur, Malaysia - the Group's first VIP nightclub globally.

Steve was then headhunted by Nightlife Giant ‘Ministry of Sound’ to take over the reins of their flagship Malaysian venue ‘Euphoria by MOS’ a 2,800 capacity super club based in Bandar Sunway. Whilst there, Steve successfully launched several new industry nights as well as the first Ministry of Sound outdoor event within Sunway Water Park featuring Deadmau5’s first LED show appearance in Malaysia with over 18,000 guests.

After being introduced to Michael Van-Cleef Ault, founder of VIP bottle clubs Pangaea, Spy Bar & Chaos in the US, Steve was offered an Executive Director role to spearhead the Marketing & Entertainment of Pangaea Singapore at Marina Bay Sands; which soon became the highest grossing nightclub per square foot in the world.

Steve later joined Robbie Hoyes-Cock, founder of The Podium Lounge in the global expansion of the luxurious Formula 1 Weekend After-Party, which saw Abu Dhabi, Monaco & Melbourne added to The Podium Lounge's international calendar.

During the Formula 1 off-season, Robbie & Steve launched The Monarchy, a VIP Party Series on the rooftop penthouse of OUE Bayfront every Friday & Saturday hosting high society weekend events for 2 years.

Since 2016 Steve has had a role as Head of Sales (Modern-on-Trade) with the Octopus Group, becoming an industry leader in Singapore with expertise in the branding, marketing & selling of top line alcohol products across the region.

Robbie Hoyes-Cock has been based in Singapore since 1982 and was schooled at Tanglin Trust and United World College of South East Asia in Singapore before gaining an international scholarship to Eton College and then reading law at Bristol University.

Following 2 years on Citibank Singapore's Management Associate Training Programme (Asia Pacific Consumer Bank), Robbie started a private VIP Club night called 'B-Yond' in 2005. Having hosted over 100 sell-out parties for Singapore's wealthy party elite, Robbie was invited by The Ritz-Carlton, Millenia Singapore to host an annual Formula 1 Weekend event over the 2009 Singapore Grand Prix, which was the birth of The Podium Lounge

In 2018, The Podium Lounge Singapore at The Ritz-Carlton, Millenia celebrated 10 Years in Singapore and hosted over 10,000 guests including 5 time Formula 1 World Champion, Lewis Hamilton and featured Keith Duffy (Boyzone), Brian McFadden (Westlife), Joel Madden (Good Charlotte) and Taboo (The Black Eyed Peas). The Podium Lounge has also hosted F1 Weekend Parties in Monaco, Melbourne and Abu Dhabi.

Robbie is also a partner of The Singapore International Jazz Festival (The Late Show) at Marina Bay Sands and launched, which is now the #1 Authority on New Places in Singapore and boasts a member base of 75,000 expats, socialites and high affluence segment event goers.

If anyone is as passionate about great service as Anant Tyagi, you will be hard pressed to find them. With a background that spans 16 years, nine of which have been in Singapore,and includes time in Ireland at The Heritage at Killenard and The Doonbeg Golf Club, as well as locally at db Bistro, Marina Bay Sands and Me@OUE.

Anant has crystallised his experience and distilled into everything Restaurant JAG represents: Phenomenal service coupled with amazing and experiential food. The India-born 32-year-old draws inspiration from a variety of places, but a few stand out: I truly enjoy the instant gratification that restaurant service provides. A facial expression rarely lies.

Anant enjoys gentlemanly pursuits such as reading classic mystery fiction, as well as hitting the open road in a touring car when not in Singapore.

Raised in different parts of India, it was only in the Mughal city of Hyderabad that Praveen Lingamneni found his spiritual home. It was here that he was introduced to an array of cuisines which refined his palate and fuelled his desire to get into the F&B industry.

Having grown up with a keen interest in Math and Science, Praveen pursued a degree in Engineering in Osmania University, Hyderabad and followed it up with a Masters degree in Business from the prestigious IIM, Bangalore. Praveen found his calling in all things luxury. To pursue this ambition, he made a bold move to leave his familiar surrounds and move to Singapore. He helped setup a profitable luxury goods division for a well-regarded trading company, and helped them establish a footing across the world from the Americas to the Far East.

It was only a matter of time before the fiercely independent Praveen took a plunge into the unknown with his own venture in 2007. He setup a boutique trading and distribution company working with Swiss watches and other luxury fashion houses from Europe.

At the same time, he also took a plunge into the restaurant space and setup a Thai Express franchise in an upmarket location in Hyderabad – Helped manage everything from the kitchen to the floor.

An indefatigable sort, Praveen channels his surplus energies towards sports. Tennis and Golf are always on his calendar, and, if not for tropical Singapore, he would be skiing the slopes every week. Among all of this, his greatest source of happiness and biggest strength remains his two darling daughters.

Jeremy Gillon   

After close to five years in Singapore, Chef Jérémy Gillon was presented an opportunity to embark on a culinary adventure unlike any other – to co-own and have complete control over the restaurant’s menu. The heart of the French Alps has always been a source of inspiration for the Chef and at Restaurant JAG, Chef Jérémy is introducing his diners to the unique region through his library of carefully sourced herbs.


Born in 1981 in Deauville, in the northwest of the country and in one of the most stunning seaside resorts in France, Chef Gillon was influenced by food from a young age. He’s mother was a great cook and family meals were large, sometimes with up to 50 people gathered for a meal.

At 14 years of age, Chef Gillon started his apprenticeship at a traditional brasserie. These were a rigorous 15-hour days. The long and hard days were challenging yet played a critical role in motivating the Chef to keep moving forward.

Chef Gillon’s commitment saw him rising from apprentice kitchen-hand in 1999 to a pastry cook in just a year. The string of Michelin Stars wasn’t far off. 1 Michelin Star was awarded in 2001 to the prestigious La Cour des Loges where Chef Gillon was the Station Chef. In 2003 while cooking at Le Chabichou in Courchevel, France, 2 Michelin Stars were awarded to the restaurant.

In 2015, while managing and directing L'Épicurien – Val – Thorens towards perfection by constantly pushing himself and his culinary techniques, the hardwork paid off when under his watch, the restaurant was awarded its first Michelin Star.


Chef Gillon gives full credit for his success to the talented Chefs he had the opportunity to learn from and refine his techniques. Michel Rochedy in Courchevel, Michel Kayser in the Gard, and Nicolas Le Bec in Lyon all played a vital role in moulding his culinary skills.

While he learned and observed the fine techniques, Chef Gillon was very clear in his own vision and in creating his own distinct style of cooking. This was evident when he took up the role of head chef at Les Restaurant du Montana nestled in the Tarentaise Valley in the French Alps.

The Singapore Experience

Chef Jérémy was invited to Singapore by Me@OUE in 2015 as the restaurant’s Executive Guest Chef. Following over two years with the restaurant, where he forged a friendship with Anant Tyagi, he headed French restaurant Audace in Wanderlust Hotel for more than a year. With the right time and perfect location, Chef Jérémy and Anant had the chance to transform their love for great food and service into reality with Restaurant JAG and The Lounge Bar.

Born in Copenhagen Denmark completed his BA majoring in Economics and Math after a year in a US college where he spent most of the time on the varsity tennis team. Joined APMoller-Maersk as a management trainee while studying for his masters before expatriating to Hong Kong. 4 years in China followed building the Guangzhou, Shenzhen, Shanghai and Ningbo branches and eventually becoming in charge of sales & marketing in Beijing.

6 years followed in Singapore heading the Far East and Middle East to Europe trades growing them to more than a billion USD in turnover followed the acquisition of the US carrier Sealand from CSX Corp. Next followed 3 years as Managing Director for all divisions in Malaysia including oversight of the new port project in Tanjung Pelepas and keeping close relations with the Malaysian government. Then head of sales for South East Asia running a team of 156 sales people and 10 key client directors. Moved to Sao Paulo as Managing Director for the group activities there, encompassing 1.800 employees in 15 offices across multiple divisions such as liner, logistics, terminals, depots, its own Shipping Line Mercosul connecting Manaus in the Amazon with the world and administrative involvement in the significant Oil Exploration in Rio. In parallel Morten completed his MBA at IMD in Lausanne (with honors) before leaving corporate life.

In 2009 Morten moved to Denmark and established Humanostics, a boutigue management consulting firm with focus on leadership and talent, and was the main founder of Predictive Systems that developed a world leading cognitive assessment for business use. 2016 was a busy year as Morten relocated back to his beloved Singapore, sold Predictive Systems to a US based Venture Capital Firm, bought out the master Franchisee for his business in 6 countries in Europe and was granted the distribution rights in South East Asia.

Today Morten is building his business in Asia greenfield while doing board and advisory roles and being an active investor spanning mainly the shipping and logistics sectors and F&B including the fine dining concept with JAG Restaurants and with Royal Jesters and Monarchy.
